Chocolate chip & Almond cookies

It was M’s 2nd Birthday and I wanted to make something else sweet other than cake. So I decided cookies it is. It has been quite sometime since we had home made cookies and everytime we switch on a movie, that’s all I dream of – Warm soft cookies to bite on and a cold glass of milk.

It is almost a crime to refuse such cravings, so here we go :)

Here’s the recipe : This makes about 3 dozen medium sized cookies.

All purpose flour – Roughly 2 cups
Salt to taste – About 1 tsp
3/4 tsp Baking Soda
2 sticks (8 oz) unsalted butter, I melted this in the microwave oven by heating for about 10 seconds
1 cup Sugar
1 tsp vanilla extract
2 large eggs
1 cup Hersheys semisweet chocolate chips
1 cup finely chopped Almonds
Preheat oven to 350 F. Grease a baking tray with some melted butter.
Mix together all the dry ingredients the flour, salt and baking soda. Add butter – I just used large fork to mix it in until it is a smooth mixture. Add pure vanilla extract, eggs one at a time.  Mix in the chocolate chips and almonds. It forms a nice smooth mixture that is easy to hold in the hands. Form small round mounds just like laddoos, you can use an ice cream scoop; I just used my hands.
Place these dough rounds on baking tray spacing them out such that when cookies are formed, they don’t stick to each other.
Leave them in for about 10 minutes, right about when you see the surfaces turning brown, pull the tray out. I used the center rack in the oven and required about 3 batches since I had a smaller baking tray.
These cookies need to be stored in air tight containers after they are cooled; eat these warm every time (just heat them in microwave for 10-15 seconds) when you are ready to eat. Gulp them down with a classic traditional cold glass of milk. You can’t go wrong here. A really great way to end your day.
These wrapped in some nice festive wrapping paper and beautiful ribbon could make a great gift when you visit someone.
